Tender cream of beans with roasted mushrooms, spinach and feta cheese
| boiled white beans 400 g |
| oyster mushrooms 400 g |
| spinach 250 g |
| garlic 2 cloves |
| feta 80 g |
| butter 60 g |
| olive oil 50 ml |
| lemon juice 25 ml |
| roasted sesame 10 g |
| TO TASTE: |
| salt |
| sugar |
| black pepper |
| red pepper |
Step 1
In the bowl of a blender, combine the garlic clove, beans, half of the olive oil, lemon juice, salt and sugar. Blend until smooth.
Step 2
Fry the mushrooms in half the butter until browned. Season with salt and black pepper.
Step 3
Fry the chopped garlic clove in the remaining butter. Add the spinach and fry until it has reduced in volume by 2-3 times. Season with salt and pepper.
Step 4
Place the bean cream, mushrooms, spinach and feta slices in plates. Sprinkle with sesame seeds, drizzle with olive oil and season with red pepper. Enjoy!
