Ingredients


CHOUX PASTRY:
wheat flour 125 g
eggs (room temperature) 4 pcs
milk 200 ml
butter 90 g
salt 1/4 tsp.
sugar 1/4 tsp.
BAKING CREAM:
yolks 6 pcs
milk 750 ml
sugar 120 g
vanilla sugar 20 g
cornstarch 50 g
softened butter (82%) 120 g

Instructions


Step 1

For the dough, combine the milk, butter, salt and sugar in a saucepan. Bring the mixture to the boil, remove from the stove, add the flour and knead into a smooth dough.

Step 2

Allow it to cool slightly, then add the eggs one by one, beating with a mixer. Divide the dough in half and place in parchment-lined molds.

Step 3

Bake at 190 degrees for 15-18 minutes. Then allow the cakes to cool.

Step 4

Prepare the cream. Mix yolks, sugar, vanilla sugar and starch. Pour in hot milk in a thin stream, stirring vigorously with a whisk.

Step 5

Pour the mixture into a saucepan and cook the cream, stirring, until the first gurgle. Then pour into a bowl, cover with clingfilm and let it cool. Beat the butter with a mixer and combine with the cream, continuing to beat.

Step 6

Spread the cream on one of the cakes directly in the mold and cover with the second cake. Put the cake in the refrigerator for 2-2.5 hours to harden. Decorate according to your taste. Bon appetit!
