Classic cream ice cream, chocolate and lime ice cream. With milk, cream and eggs.
milk 1 cup |
cream (33%) 600 ml |
sugar 300 g |
vanilla sugar 20 g |
egg yolks 6 pcs |
dark chocolate 100 g |
cocoa powder 2 tbsp. |

Step 1
Heat the milk, add the sugar, vanilla sugar and gradually add the egg yolks. Continue to heat the mixture over a low temperature, stirring constantly with a whisk. But do not bring to a boil! When the milk and egg mixture thickens, remove it from the stove, cool it down and put it in the refrigerator for 30-40 minutes.
Step 2
After the time has passed, whip the cream to sharp peaks and introduce the cooled milk-egg mixture into it. Beat well with a mixer to make the mixture homogeneous, then pour it into a flat mold and place it in the freezer for at least 3 hours. At the same time, take the ice cream out of the freezer every hour and whip it with a fork or mixer to make it airy. After this time, divide the ice cream into three portions.
Step 3
To make the chocolate ice cream, chop the chocolate in a blender and add it to one of the portions along with the cocoa powder. Mix well.
Step 4
To make lime ice cream, grate the zest of one or two limes and squeeze out the juice. Then add this mixture to the second batch of ice cream and mix well.
Step 5
Put the ice cream in the freezer for another 3 hours or overnight.
