Cutlets according to Andrei Dromov's mom's recipe, without which no holiday in his family goes without
| HOLIDAY CUTLETS: |
| beef liver (peeled) 300 g |
| pork shoulder 300 g |
| pork net 400 g |
| onion (large) 2 pcs |
| butter 30 g |
| vegetable oil 100 g |
| boiling water |
| salt, pepper mixture to taste |
Step 1
Dice one onion and fry it in a mixture of butter and half the vegetable oil. Then place the onion on a sieve to drain off the excess oil.
Step 2
Put the meat, liver, fried and raw onions through a meat grinder. Season with salt, pepper and mix.
Step 3
Wrap a tablespoon of mincemeat into a pork net soaked in salted water for an hour and washed beforehand and pin the edges with toothpicks.
Step 4
Fry the cutlets in the remaining vegetable oil until crusty and transfer to a pot. Pour boiling water to cover the cutlets and simmer under a lid for 20 minutes.
Step 5
Then place the cutlets on a baking tray covered with parchment, remove the toothpicks, a little salt and pepper and brown in the oven at 200 degrees for 10 minutes.
Step 6
If desired, serve the holiday cutlets with herbs and cherry tomatoes.
