Milk pancakes made of whole wheat flour with thick, salty-sweet caramel

| whole wheat flour 150 g |
| egg 1 egg |
| warm milk 200 ml |
| leavening agent 5 g |
| sugar 50 g |
| salt pinch |
| ground cinnamon to taste |
| vegetable oil 100 ml |
| CARAMEL: |
| sugar 300 g |
| vanilla sugar 10 g |
| warm cream (20%) 150 ml |
| warm milk 150 ml |
| salt 7 g |
Step 1
Prepare the caramel. Mix sugar, salt and vanilla sugar in a saucepan. Melt over medium heat, stirring, until caramelized. Then pour in the milk and cream, stir until smooth and let cool.
Step 2
Prepare the fritters. Mix the egg with the salt and sugar, pour in the milk and beat with a whisk until frothy. Separately mix the flour with the baking powder and cinnamon and pour into the milk and egg mixture. Mix until smooth.
Step 3
Fry the fritters in vegetable oil over medium-high heat until browned. Serve with caramel.
