Exotic Thai salad with fried chicken fillet and sweet-sour-spicy sauce
| chicken fillet 250 g |
| roasted peanuts 40 g |
| red onion 20 g |
| ginger root 20 g |
| garlic 1 clove |
| mint leaves 5 g |
| cilantro leaves 10 g |
| Iceberg lettuce 4 leaves |
| olive oil 15 ml |
| salt, sugar to taste |
| pepper blend to taste |
| DRESSING: |
| lime 1 pc |
| sweet and sour chili sauce 50 g |
| olive oil 20 ml |
| salt, sugar to taste |
Step 1
Cut the chicken fillets into thin slices. Season with salt and pepper.
Step 2
Saute grated ginger and minced garlic in olive oil. Add the chicken and stir-fry until cooked through, then remove from the stove and allow to cool.
Step 3
Slice the red onion, chop the peanuts, mint and cilantro leaves. Combine with the meat and stir to combine.
Step 4
Prepare the dressing. Mix lime juice, chili sauce and vegetable oil. Season with salt and sugar.
Step 5
Dress the salad and mix well. Serve in iceberg leaves. Enjoy!
