Step 1
Chop the olives, parsley leaves and peeled garlic. Grate the cheese on a fine grater.

Cut 100 g squid into small cubes and fry in olive oil over medium heat for 1-2 minutes.

Combine the fried calamari, olives, parsley, garlic, cheese and breadcrumbs. Mix well, pepper and, if necessary, salt.

Rinse the remaining squid carcasses, pat dry with a paper towel and make 2-3 shallow diagonal cuts on each side. Fill with the prepared stuffing and secure the top with a toothpick.

Heat the oven to 170 ° C. Place the calamari in a baking dish or deep baking tray, drizzle with olive oil and pour in the wine. Bake for 30 minutes. Serve warm or cold.
