A terrific main course of parmesan chicken with a side of spaghetti in tomato sauce based on Gordon Ramsay's recipe.

breadcrumbs 40 g |
grated parmesan 80 g |
wheat flour 40 g |
eggs 3 pcs |
olive oil 50 ml |
butter 40 g |
tomato sauce 3 tbsp. |
mozzarella 100 g |
spaghetti 120 g |
green basil 10 g |

TOMATOUS SOUCE: |
pelati tomatoes 150 g |
olive oil 1 tbsp. |
dried garlic |
basil |
oregano |
sugar |
salt |
Step 1
Combine all ingredients for tomato sauce, beat with a blender, simmer for a few minutes.
Step 2
Butterfly the chicken fillets and roll out between two sheets of parchment.
Step 3
Mix the breadcrumbs with half of the Parmesan, salt and spices. Coat the chicken fillets in the flour, then dip in the beaten eggs and then coat in the breadcrumbs. Roll out again between sheets of parchment.
Step 4
Fry the chicken in the oil mixture for two and a half minutes on each side.
Step 5
Then transfer to a parchment-lined baking tray, place two spoonfuls of sauce and mozzarella slices on each fillet. Season with pepper and salt. Bake for 5-6 minutes at 200°C.
Step 6
Boil the spaghetti in salted water, season with olive oil, remaining sauce and basil leaves. Serve the chicken and spaghetti with a sprinkling of parmesan. Enjoy!
