Delicate cottage cheese mousse with granola, dried fruits and nuts
COTTAGE CHEESE MOUSSE: |
curd mass (unsweetened) 200 g |
cream (30%) 100 ml |
powdered sugar 40 g |
vanilla sugar 10 g |
GRANOLA: |
Hercules oats (extra) 400 g |
raisins 250 g |
walnuts 100 g |
almonds 100 g |
sunflower seeds 60 g |
pumpkin seeds 60 g |
sesame seeds 60 g |
honey 80 g |
butter (melted) 50 g |
sugar 50 g |
vanilla sugar 10 g |
salt to taste |
Step 1
Combine all the ingredients for the granola.
Step 2
Spread the resulting mixture evenly on a baking tray lined with parchment. Bake for 40 minutes at 170 degrees, stirring every 10 minutes. Then allow to cool.
Step 3
Whisk the cream with the powdered sugar. Add the vanilla sugar and the curd mixture. Stir to combine.
Step 4
Serve the cottage cheese mousse with granola. If desired, add berries and fruits. Enjoy.
