A real confectionery masterpiece - pear baked with chocolate and nuts with vanilla sauce!
| Williams pears 4 pcs. |
| dark chocolate 80 g |
| roasted chopped hazelnuts 50 g |
| white dry wine 60 ml |
| vanilla sauce 200 g |
| butter 20 g |
| honey 80 g |
| vanilla sugar 10 g |
| warm water 40 ml |
| cloves 2 buds |
| VANILLA SAUCE: |
| milk 200 ml |
| yolks 2 pcs |
| sugar 15 g |
| vanilla sugar 10 g |
Step 1
For the sauce, mix the hot milk, sugar and vanilla sugar and pour over the yolks, stirring vigorously with a whisk. Then pour the mixture into a saucepan, bring to a creamy consistency and allow to cool.
Step 2
Melt the chocolate in a water bath, add the nuts, butter, water and 50g of vanilla sauce. Stir and place in the refrigerator.
Step 3
Prepare the syrup. Mix the wine, honey, cloves, vanilla sugar and simmer at medium temperature for 3-4 minutes.
Step 4
Peel the pears and remove the core. Stuff them with the chocolate and nuts and brush liberally with the syrup.
Step 5
Bake the pears at 180 degrees for 35-40 minutes. Then let them cool down.
Step 6
Before serving, pour vanilla sauce and sprinkle with nuts. Bon appetit!
