Minestrone is a light soup made from seasonal vegetables, a specialty of Italian cuisine.

fennel 200 g
celery stalk 300 g
celery root 300 g
parsley 50 g

Lentils (various kinds) 100 g
Beans (various kinds) 300 g
pumpkin 350 g
potatoes 250 g
topinambour 70 g
carrots 300 g
onion 100 g
Parmesan crust 70 g
jamon skin 130 g

pepper to taste

Instructions


Step 1

In a large bowl with 3 liters of cold water, dissolve the baking soda and rinse the vegetables and root vegetables well in the solution.

Step 2
