 
Lush and refreshing lemon muffins with white chocolate
| wheat flour 135 g | 
| leavening agent 6 g | 
| salt a pinch | 
| egg 1 pc | 
| sugar 75 g | 
| juice and zest of 1/2 lemon | 
| melted butter 35 g | 
| milk 95 ml | 
| white chocolate 85 g | 
| pastry crumbs 40 g | 
| PASTRY CRUMBS: | 
| wheat flour 65 g | 
| sugar 40 g | 
| melted butter 40 g | 
Step 1
Prepare the crumble. Combine all ingredients, mix with a mixer, transfer to a container and freeze.
Step 2
Melt the chocolate in a water bath, then let it cool slightly.
Step 3
Combine the butter, egg and sugar. Beat with a mixer.
Step 4
Sift in the flour and baking powder, add the salt, lemon zest and juice, milk and mix with the mixer.
Step 5
Combine both mixtures with the chocolate, mix and pour the batter into parchment-lined molds. Sprinkle with the pastry crumbs.
Step 6
Bake at 170 degrees for 25 minutes. Enjoy!
