In Georgia, you can't go anywhere without tkemali - it is served with meat, fish and poultry.... Or simply with hot and fresh pita bread! Today we are making homemade sauce from plums and serving it with chicken sausages.

| dill 1 bunch |
| garlic 1 head |
| ground red pepper 1.5 tsp. |

| FOR SERVING: |

Step 1
Prepare the tkemali sauce: wash the plums, cut in half and remove the seeds. Peel and crush garlic in a garlic press.
Step 2
Make a cross-shaped cut on each plum, blanch in hot water and peel off the skin. Cut the plums into small cubes.
Step 3
Place the plum pieces in a saucepan and simmer over low heat until they are completely cooked.
Step 4
Meanwhile, wash, dry and finely chop the dill.
Step 5
Add the spices, garlic and dill to the pot and simmer for another 5-7 minutes.
Step 6
Put the tkemali into jars, pour 1 tsp of vegetable oil on top and close tightly.
Step 7
Heat vegetable oil in a grill pan. Dry the chicken sausages thoroughly.
Step 8
Grill the sausages on all sides until browned. Season with black pepper and serve with freshly prepared tkemali sauce and pita bread.
