Incredibly delicious, made of crispy puff pastry, blueberry banana pie
puff pastry 600 g |
wheat flour 30 g |
blueberries 800 g |
bananas 350 g |
egg white 2 pcs |
egg yolk 1 pc |
powdered sugar 100 g |
cornstarch 30 g |
lemon zest 2 tsp. |
vanilla sugar 25 g |
Step 1
Mix the finely diced banana with the blueberries, lemon zest, vanilla sugar, powdered sugar and starch. Then stir in the beaten egg white.
Step 2
Dust the table with flour. Roll out two thirds of the dough to the size of the mold, 24-25 cm in diameter.
Step 3
Place the dough in the mold with the edges hanging down slightly. Put the filling inside and brush the edge of the pastry with egg yolk.
Step 4
Roll out the rest of the dough, cover the filling and roll with a rolling pin along the side. Remove any excess dough, make a few cuts in the surface and release any excess air.
Step 5
Brush the pie with egg yolk, bake at 180˚C for 30 minutes. Then allow to cool. Enjoy.
