Spicy and savory Mexican-style zucchini boats

Step 1
Cut the zucchini in half, remove the pulp, brush with olive oil and bake at 170 degrees for 10 minutes.
Step 2
Fry the chopped onion and sweet pepper in the oil. Add the mince and fry for 5-6 minutes. Season with salt and spices. Add the minced garlic and chili peppers, and after a minute, add the corn and beans. Stir to combine.
Step 3
Fill the zucchini boats with the filling, sprinkle with cheese and bake at 180 degrees for 10 minutes.
