A hearty home dish of Georgian cuisine - odjakhuri (fried meat with potatoes)
| peeled potatoes 0.5 kg |
| pork neck 400 g |
| onion 150 g |
| garlic 3 cloves |
| large tomato 1 pc |
| melted butter (or lard) 80 g |
| parsley and cilantro 10 g |
| chili pepper 1 pc |
| TO TASTE: |
| salt |
| black pepper |
| ground coriander |
| paprika |
Step 1
Cut the meat into large pieces and the onion into feathers. Combine in a bowl, season with salt, black pepper, coriander and paprika. Mix well, pressing down on the onions, cover with clingfilm and leave for at least 20 minutes.
Step 2
Fry the coarsely chopped potatoes in half the oil or lard. A couple of minutes before they are ready, season them with chopped garlic, salt and black pepper.
Step 3
In the remaining oil, fry the meat for 7 minutes. Add the onion and fry for a further 7 minutes. Then add the chopped tomato to the meat, and a couple minutes before the meat is ready, add the chili pepper and herbs.
Step 4
Combine the meat with the potatoes and mix. Bon appetit!
