Cheese-dried meat with spices - traditional Western Ukrainian dried polendvitsa.
Such meat is not cheap in supermarkets, so we will tell you how to prepare it at home. The technology of preparation is very simple, but it takes a lot of time. So for those who want to cook polendvitsa on their own, we give the recipe!
pork loin (300-400 g) 1 piece |
sea salt 0.5 kg |
sugar 50 g |
ground coriander 1 tbsp. |
dried mint 1/2 tbsp. l. |
dried parsley 1/2 tbsp. |
ground black pepper 1 pinch |
ground chili pepper 1 pinch |
paprika 1 tbsp. |
turmeric 1 pinch |
curry 1/2 tbsp. |
Step 1
Peel the pork loin from the foil.
Step 2
In a suitably shaped dish (you can use a disposable foil container, plastic container or bread mold — as long as it is not too wide and the meat does not touch the sides), mix together the sea salt, sugar, coriander, mint, parsley and red pepper.
Step 3
Dip the meat in this mixture, cover with foil (if you have a foil container, you can roll it up and wrap it in foil) and leave in the refrigerator for 3 days.
Step 4
Then rinse the meat of salt, dry it, pepper it liberally and rub it with a mixture of paprika, curry and turmeric.
Step 5
Wrap in cling film and put in the fridge for another 6 hours. Bon appetit.
