Zucchini stuffed with ground turkey with nuts, mozzarella and tomato sauce
| zucchini (250 g each) 2 pieces |
| turkey thigh stuffing 350 g |
| pine nuts 60 g |
| onions 50 g |
| garlic 2 cloves |
| mozzarella cheese 120 g |
| vegetable oil 50 ml |
| cilantro 10 g |
| salt to taste |
| black pepper to taste |
| mild curry to taste |
| TOMATO SAUCE: |
| pelati tomatoes 150 g |
| balsamic vinegar 15 ml |
| salt to taste |
| sugar to taste |
| oregano to taste |
| dried garlic to taste |
Step 1
Fry chopped onion and garlic with minced meat in oil. Season with salt and spices. Add nuts and chopped coriander and mix.
Step 2
For the sauce, combine the chopped pelati tomatoes with the rest of the ingredients. Simmer for a couple minutes.
Step 3
Cut the zucchini in half, remove the cores, brush with oil and fry on both sides.
Step 4
Then fill with minced meat, put cheese slices on top and wrap in foil.
Step 5
Bake on the grill for 5-6 minutes. Serve with sauce. Enjoy!
