The flavorful and so welcome Christmas pudding with raisins, cherries and nuts that the Cratchit family waited with bated breath for in A Christmas Story
dark and light raisins 200 g |
dried cherries 200 g |
mixed nuts (except peanuts) 200 g |
rum 200 ml |
flour 125 g |
melted butter 225 g |
cane sugar 125 g |
nutmeg to taste |
cloves to taste |
ground cinnamon to taste |
dried ginger to taste |
eggs 2 pcs |
honey 30 g |
breadcrumbs 60 g |
Step 1
Pour rum over the dried berries and leave to marinate for 5-7 days.
Step 2
Add the spices to the sifted flour and mix.
Step 3
Beat 200 grams of butter with sugar. Add honey, eggs and whisk again. Combine the mixture with the flour and spices and whisk again until smooth. Add the breadcrumbs, crushed nuts, berries and mix.
Step 4
Transfer the dough to a heatproof bowl greased with butter and cover with parchment. Cover the bowl with two layers of foil and tie with twine.
Step 5
Place the bowl in a saucepan, pour water, level to the middle of the bowl. Once the water comes to a boil, cook the pudding over medium-high heat for 4 hours. Keep an eye on the water level so that it does not drop below the middle of the bowl.
Step 6
Afterwards, allow the pudding to cool and serve.
