 
Crispy hearty Turkish pideh flatbread with ground beef and spicy spices
| BATTER: | 
| wheat flour 250 g | 
| dry yeast 7 g | 
| vegetable oil 20 ml | 
| warm water 100 ml | 
| salt 5 g | 
| sugar 5 g | 
| FILLING: | 
| ground beef 300 g | 
| onion 60 g | 
| garlic 2 cloves | 
| chili pepper 1 pc | 
| salt 5 g | 
| ground black pepper 1/2 tsp. | 
| smoked paprika 1 tsp. | 
| zira 1. tsp. | 
| parsley 10 g | 
| vegetable oil 20 ml | 
| egg yolk 1 pc | 
Step 1
Dissolve the sugar and yeast in the water. Add the sifted flour, salt, oil and knead the dough. Cover with clingfilm and leave in a warm place for 1 hour.
Step 2
Sauté the chopped garlic, onion and chili pepper in vegetable oil. Add the mince and stir-fry for 8 minutes. Season with salt and spices, stir and fry for a couple more minutes. Then remove from the stove, add the chopped parsley and stir.
Step 3
Dust the table with flour. Bomb the dough, divide it into 2 parts and roll each part into an oval shape. Then form small sides and place on a parchment-lined baking tray. Fill the tortillas with the filling and brush the dough with the egg yolk.
Step 4
Bake for 17 minutes at 200℃. Enjoy.
