 
Recipe for Olivier with crawfish shakes and red caviar by Mikhail Koshcheev, chef of the restaurant "On Mosfilmovskaya".
| boiled potatoes 160 g | 
| boiled carrots 160 g | 
| eggs 4 pcs | 
| pickles 160 g | 
| crawfish shakes 80 g | 
| canned peas 155 g | 
| homemade mayonnaise 100 g | 
| red caviar 50 g | 
| green onion 3 g | 
| FOR HOMEMADE MAYONNAISE: | 
| Extra Virgin olive oil 200 ml | 
| egg yolks 2-3 pcs | 
| sugar 1 tsp. | 
| salt 1/4 tsp. | 
| table mustard 1/2 tsp. | 
| lemon juice to taste | 
Step 1
Prepare homemade mayonnaise. Thoroughly mix the yolks with sugar, salt and mustard. Gradually add a little olive oil, using circular movements to one side to thoroughly emulsify the ingredients. At the end, the amount of oil can be increased, but at first add it in a thin trickle, very carefully. At the end, add the lemon juice to the emulsion, mix thoroughly again and put the mayonnaise in the refrigerator for a while to thicken slightly.
Step 2
Dice the vegetables, hard-boiled eggs and crawfish shakes. Put the diced ingredients in a bowl, salt and mix. Add canned peas and red caviar. Mix gently.
Step 3
Dress the salad with homemade mayonnaise. Decorate the dish with finely chopped green onions.
