If today you want something homemade "I'll make dumplings", you will think. We, in turn, advise you to move away from the classics to the Italian side and make Italian-style dumplings, or rather ravioli!
Salmon fillet ("puck") 1 piece |
Flour 200 g |
Eggs 3 pcs |
Butter 20 g |
Spinach (thawed, grated) 3 tbsp. |
Shallots 3 pcs. |
Dill a few sprigs |
Sour cream a few tbsp. |

Step 1
For the dough, dump the flour onto the work table and make a depression in the center. Put 2 eggs, the thawed and squeezed spinach and a pinch of salt into the hollow. Knead the dough until it is smooth and elastic. Cover the dough with a towel and leave it in the refrigerator for half an hour.
Step 2
For the filling - put the salmon fillet pieces, 1 egg, shallots, a pinch of white pepper and salt in a food processor. Mix thoroughly.
Step 3
Divide the dough into 2 parts and roll out 2 thin layers 2 mm thick. Cover the ravioli mold with one sheet of dough and place the minced fish in each of the cells. Cover with the second sheet of dough and press down firmly with a rolling pin.
Step 4
Boil the water, salt and add a few tbsp of olive oil. Put the ravioli into the boiling water and cook for 4-5 minutes. Arrange on plates, put a piece of butter, add a few tbsp. of sour cream and garnish with herbs.
