Quails have always been considered a delicacy and were only served on special occasions. Today it is easy to buy them, especially since cooking them is a pleasure! To conclude the kebab week, we are preparing a kebab of quail carcasses in a honey-citrus marinade.
FOR SHASHLIKE: |

FOR MARINADE: |
orange juice (or 1 orange) 300 ml |
soy sauce 150 ml |
honey 1 tbsp. |
ginger root 1-2 cm |
red hot pepper 1/4 tsp. |
salt |
Step 1
Two to three month old quails are usually used for this kebab. At this age, the meat is tender and does not need a long marinade.
Step 2
Mix orange juice, soy sauce, honey, a little grated ginger and red hot pepper in a bowl.
Step 3
Gutted quails should be marinated in the orange-soy sauce and left for 2 hours.
Step 4
Tie each quail with string so that the legs and wings fit snugly into the carcass.
Step 5
Thread the quails onto a skewer and bake in the oven for 1 hour at 180C.
