Turkish wedding soup is a rich, thick broth-based soup with chunks of meat. This nutritious and tasty soup is preferred especially in the winter season.
lamb 350-400 g |
flour 3 tbsp. |
yogurt 4 tbsp. |
egg yolk 1 pc |
butter 2-3 tbsp. |
coarsely ground red pepper to taste |
lemon juice to taste |
Step 1
Let's start preparing the soup. Boil the meat, having previously cut it into cubes. Boil until the meat is easily broken down into fibers. Then take the meat out of the broth, cool it down and separate it into fibers.
Step 2
Then prepare a seasoning for the soup: mix yogurt and flour, add an egg yolk and a little lemon juice, whisk everything.
Step 3
Before adding the seasoning to the meat broth, you need to slightly raise its temperature so that the yogurt and lemon do not curdle. To do this, pour a thin stream into the bowl with seasoning broth, and the second constantly stir with a whisk. Then slowly add the heated seasoning to the broth, stirring continuously.
Step 4
Finally, add the chopped meat to the soup and cook for a few more minutes on low heat. Salt and add butter, lightly fried with coarsely ground red pepper. When serving, if desired, you can add vinegar to the soup. Bon appetit!
