Recipe from Sophia Andreyevna, Leo Tolstoy's wife.

Leo Tolstoy loved this dessert and it can still be tasted in Yasnaya Polyana, the family estate where the writer lived most of his life. The Tolstoy family even had a saying "What is stronger than death and fate? Sweet ANKOVSKY pie!". The recipe was left to Sophia Andreevna by their family doctor Anke, and the whole "trick" of the pie was the lemon cream.

Ingredients

BATTER:
flour 400 g
butter 200 g
crushed sugar 100 g
yolks 3 pcs
water 1 shot glass
butter
FILLING:
butter 100 g
eggs 2 pcs
sugar 200 g
lemon 3 pcs

Instructions

Step 1

In Tolstoy's recipe book, the recipe for the pie is very concise: "One pound of flour, half a pound of butter, a quarter of a pound of powdered sugar, 3 yolks, one shot of water. The butter should be straight from the cellar, cooler.

Step 2

Stuffing: a quarter of a pound of butter, two eggs rubbed with butter, half a pound of powdered sugar, the zest of two lemons grated and the juice of three lemons. Boil until it is as thick as honey."
