Let's please vegetarians and make a hearty and flavorful quiche with tomatoes, basil and caramelized onions

red onion 250 g |
tomatoes 280 g |
basil leaves 15 g |
honey 40 g |
white dry wine 60 ml |
balsamic 25 ml |
eggs 6 pcs |
cream (30%) 200 ml |
soft mozzarella 150 g |
butter 40 g |
TO TASTE: |

black pepper |

Step 1
Combine all the ingredients for the crust, knead the dough, wrap it in clingfilm and put it in the fridge for 1 hour.
Step 2
Fry the chopped onion in the oil. Pour in the wine and evaporate. Add the balsamic, honey, salt and black pepper. Cook the onions for 5-6 minutes, then let them cool.
Step 3
Spread the dough over the mold, lay out the onions, then the diced tomatoes and basil. Season with oregano, salt and black pepper. Top with the mozzarella slices.
Step 4
Combine the eggs, cream and salt, mix and pour over the filling.
Step 5
Bake the quiche at 180 degrees for 35-40 minutes. Bon appetit!
