For avid sweet tooths - sweet quiche made of lean dough with apples and cherries in caramel and lemon glaze.

wheat flour (top grade) 200 g |
coarse flour 100 g |

FILLING: |
apples 6 pcs |
pitted cherries 200 g |
sugar 2 tbsp. |
galette cookies 150 g |
honey 2 tbsp. |
lemon 1 pc |
ADDITIONAL: |
egg yolk 2 pcs |

Step 1
Prepare the dough: mix both types of flour, salt, olive oil and ice water. Knead the dough, wrap it in clingfilm and put it in the refrigerator for 1 hour.
Step 2
Prepare the filling. Chop the cookies in a blender. Send the peeled, coarsely diced apples to a dry frying pan, pour sugar and stew for 10 minutes. Then add grated lemon zest, lemon juice to taste, stir. Remove the apples from the stove, add honey, chopped cookies and mix well once again.
Step 3
Spread the dough into a buttered mold, including the sides. Place the filling, cherries and brush the sides of the dough with the egg yolk. Bake the quiche for 25 minutes at 180 degrees. Serve warm or cold.
