Batatas baked in honey and cinnamon on a bed of cream cheese
| peeled yams 600 g |
| liquid honey 1 tbsp. |
| cream cheese 150 g |
| grated ginger root 1 tsp. |
| olive oil 60 ml |
| ground cinnamon 1/2 tsp. |
| zest of 1 lemon |
| TO TASTE: |
| parsley |
| green onion |
| lemon juice |
| salt |
| black pepper |
| chili flakes |
Step 1
Dice the yams. Add 2/3 of the oil, honey, ginger, lemon juice, chili flakes, salt and cinnamon. Stir to combine.
Step 2
Place on a baking tray, bake at 185 degrees for 20-25 minutes, then let cool.
Step 3
Mix cream cheese with lemon zest. Serve the yams on a bed of cream cheese, drizzle with olive oil, sprinkle with chopped herbs and pepper. Enjoy!
