Spicy rabbit braised in light beer
rabbit 1 kg |
garlic 3 cloves |
onion 100 g |
carrot 200 g |
celery stalk 150 g |
light beer 0,5 l |
chicken stock 600 ml |
olive oil 60 ml |
black pepper peas 1 tsp. |

sugar |
rosemary |
sage |

Step 1
Dice the carrots, celery and onion and mince the garlic. Combine the vegetables with the rabbit pieces. Add salt and all spices. Fill with beer, mix, cover with foil and leave to marinate for at least 2 hours!
Step 2
Then take the meat out of the marinade, pat dry with a paper towel and fry in oil until browned.
Step 3
Add chicken broth, marinade with vegetables, salt, sugar to the meat and stew for 1-1,5 hours. Bon appetit!
