Step 1
Season the meat with salt and pepper and coat in flour.
Step 2
Fry in vegetable oil until crispy, transfer the meat to a plate.
Step 3
Pour the wine into the pan where the meat was frying and reduce by a third. Then add the crushed garlic, bay leaf, salt, sugar, black pepper, thyme, mustard, pour in the water and bring to the boil.
Step 4
Put the onion cut in half in the bottom of the pot and place the meat on it. Fill with sauce. Cover with a lid and bake at 250 degrees for 1.5 hours.

Then, add coarsely chopped carrots and potatoes and bake for another 45 minutes. Bon appetit!
