Traditional Western Ukrainian steamed dumplings with aromatic mushroom machanka
KNEDDLES: |
potatoes (boiled) 400 g |
wheat flour (coarse) 150 g |

MACHANKA: |
mushrooms 250 g |
dried white mushrooms (chopped) 1 tsp. |
vegetable oil 1 tbsp. |
butter 40 g |
flour 1/2 tbsp. |
milk 100 ml |
sour cream (15%) 50 g |
cream (20%) 50 ml |
salt, pepper to taste |
Step 1
Prepare the dumplings. Grate the peeled potatoes on a fine grater, add the egg, salt, pepper, gradually add the flour and knead the dough. Then cover it with a towel and leave it for 20 minutes. After this time, divide the dough into 8 pieces, form the dumplings and steam for 10 minutes.
Step 2
Prepare the machanka. Fry the coarsely chopped mushrooms in vegetable oil. Fry the flour in the butter until golden. Add the milk and stir until thickened. Then add the fried mushrooms, sour cream, and cream. Salt, pepper, add dried porcini mushrooms and stir fry for a couple of minutes.
Step 3
Serve the dumplings with machanka. Enjoy.
