Andrei Dromov's favorite cherry pie made by his grandmother.
wheat flour (4 cups) 640 g |
eggs 2 pcs |
egg yolk 1 pc |
sugar 250 g |
kefir 450 g |
butter 100 g |
dough leavening agent 1 packet |
vanilla sugar 1 packet |
cherries (frozen, seedless) 2 cups |
Step 1
Beat the eggs with the sugar until white. Then pour in the kefir, add the vanilla sugar and baking powder.
Step 2
Melt the butter in a saucepan, thinly stream it into the mixture and stir.
Step 3
Sift in the flour. Add 560 grams of flour (3.5 cups) to the liquid mixture and knead with a spatula until the dough is slightly sticky.
Step 4
Grease a baking dish with butter and sprinkle with flour. Pour 4/5 of the batter into the mold and top evenly with the cherries.
Step 5
Add the remaining flour to the remaining dough and knead into a firm dough. Roll it out to 2 millimeters, cut out strips and place on top of the pie in the form of a net.
Step 6
Brush the net with egg yolk and bake the pie at 170 degrees for 80 minutes. Serve the pie warm, with milk if desired.
If you want the pie to be sweet rather than sour (sweet pastry and sour cherries), sprinkle the cherries with sugar before laying out the pastry mesh.
