Light Maghreb couscous salad with arugula

Ingredients


couscous 80 g
cucumbers 100 g
fresh skinned tomatoes 120 g
radishes 30 g
arugula 60 g
parsley leaves 10 g
lemon 1/2 pc
lime 1/2 pc
olive oil 30 ml
TO TASTE:
mint leaves
honey
salt
zira
ground black pepper

Instructions


Step 1

Fill the couscous with hot water at a ratio of 1 to 2, cover and leave to cool completely.

Step 2

Cut the peeled cucumbers and radishes into half rings. Remove the core from the tomatoes and cut the pulp into thin slices. Loosen the couscous and combine with the vegetables and herbs.

Step 3

Prepare the dressing. Combine the lime and lemon juices, olive oil, salt, zira, black pepper and honey. Stir and dress the salad. Enjoy.
