Ashure is a Turkish dessert porridge that consists of a mixture made up of grains, fruits, dried fruits and nuts. In Turkey, this dish is prepared all year round.

yellow raisins 200 g |
dried figs 200 g |
hazelnut 1 tbsp. |
peel of 1 orange |
water 3 liters |
milk 2 tbsp. |
sugar 1 tbsp. |
salt pinch |
decoction of cloves (from 1 tsp. cloves) 1/2 tbsp. |
FOR SERVING: |
hazelnuts 25 g |
black sultanas (kuş üzümü) 25 g |
walnuts 100 g |
pomegranate 1 pc |
cinnamon |
Step 1
Boil the chickpeas and beans - separately.
Step 2
Rinse the wheat, pour boiling water over it, boil for 5 minutes and drain. Repeat this procedure. After that, add boiling water and boil for 50 minutes.
Step 3
Add boiled chickpeas, beans, finely chopped apricots, yellow raisins, dried figs, orange peel to the softened wheat and cook for 15 minutes.
Step 4
Add hot milk, sugar, salt, hazelnuts, clove decoction and simmer for another 15 minutes.
Step 5
Pour into glass bowls.
Step 6
After the ashureh has cooled, you can sprinkle with hazelnuts, walnuts, pistachios, black sultanas, yellow raisins and pomegranate.
Step 7
Approximately 3 liters of boiling water is used in the preparation of ashureh. It is best to keep the boiling water ready to add if needed. You can also add less sugar, to your taste.
