Another gastronomic symbol of the capital, the Kiev-style cutlet, will celebrate its centenary in just a few years! What is not a reason to cook this dish already now? Today's recipe from Dasha is miniature Kiev-style cutlets.

large chicken fillet 1 pc |
pork loin 200 g |
lard 50 g |
butter 1/2 cup |
loaf (crumb) 1/2 pc |
egg white 2 pcs |

Step 1
Wash and dry the chicken wings and separate the meat from the bone. You will need the bones from the wings for cutlets.
Step 2
Grind the loaf crumbs in a blender and dry in a pan. Freeze the butter in the freezer.
Step 3
Prepare the mince by mincing the pork and lard in a meat grinder. Season the mince with black pepper and salt.
Step 4
Wash and dry the chicken fillets and cut them into 6 thin slices.
Step 5
Take the butter out of the freezer and cut into cubes. Whisk the egg whites in a separate bowl.
Step 6
Form a patty: stick a bone in a piece of butter and wrap in one layer of chicken.
Step 7
Dip the cutlet in flour and then in the protein. The next layer will be minced meat, then - again protein and, finally, bread crumbs.
Step 8
Fry the ready cutlets on a frying pan in hot vegetable oil or bake in a well heated oven.
