Flavorful salad of young beets with greens dressed with citrus sauce
| 5-6 small tubers of young beet |
| 80 g red onion |
| 15 ml lemon juice |
| 10 g each of mint, cilantro and basil leaves |
| salt, sugar, black pepper to taste |
| DRESSING: |
| 30 ml orange juice |
| 1 tsp. orange zest |
| 1 tsp. ground zither |
| 30 ml olive oil |
| salt to taste |
Step 1
Wrap washed dry beets in foil and bake at 180 degrees Celsius for 30-40 minutes. Then let cool, peel off the skin and cut into large slices.
Step 2
Cut the onions into half rings. Season with sugar, lemon juice and salt, crush with your hands and leave for a few minutes.
Step 3
Combine all the ingredients for the dressing, dress the beets and serve sprinkled with chopped herbs and pepper. Enjoy.
