Traditional English dessert - crumble with apples and black currants
sweet-sour apples 900 g |

sugar 150 g |
vanilla sugar 20 g |
zest of 1 lemon |
PASTRY CRUMBS: |
wheat flour 110 g |
chilled 82% butter 60 g |
sugar 20 g |
salt a pinch |
Step 1
Cut the peeled and coreless apples into small cubes.
Step 2
Mix with the blackcurrants, vanilla sugar, sugar and lemon zest and place in a ceramic mold.
Step 3
Add flour, salt and sugar to the grated butter, rub it all together into a crumb and sprinkle over the apple and currant filling.
Step 4
Bake the kramble at 190 degrees for 40-45 minutes. Serve cold. Enjoy.
