Spicy Mexican-style yams with cilantro sauce
| yams (2 of 200 g each) 400 g |
| canned red beans 60 g |
| canned corn 60 g |
| tomatoes 100 g |
| red onion 30 g |
| olive oil 60 ml |
| fresh chili pepper to taste |
| paprika to taste |
| salt to taste |
| black pepper to taste |
| SOUCE: |
| cilantro 40 g |
| nonfat sour cream 120 g |
| garlic 1 clove |
| honey 1 tsp. |
| lime juice 15 ml |
| olive oil 20 ml |
| salt to taste |
Step 1
Cut the yams in half. Place on a baking tray lined with parchment. Brush with olive oil, season with salt, black pepper and paprika. Bake at 220 degrees for 20-25 minutes.
Step 2
Finely dice the onion and tomato. Add the chopped chili pepper, corn, beans, salt, black pepper and olive oil. Stir to combine.
Step 3
For the sauce, combine the chopped garlic and cilantro in the bowl of a blender. Add the remaining ingredients and blend.
Step 4
Spread the vegetable and bean mixture on the yam halves. Serve with the cilantro sauce. Enjoy!
