Step 1
For the dressing, mix olive oil with lemon juice, beat lightly with a fork, salt and pepper.
Step 2
Remove the pit from the avocado, peel off the skin and slice into thin slices.
Step 3
Mix avocado, rucola, dressing and arrange on plates.
Step 4
Top with tuna slices, cherry tomatoes and olives.
If the tuna is canned in olive oil, that oil can be used as an ingredient for the dressing.
