Norwegian breakfast - potato pancakes lefse with crab stick topping, fish roe, cucumber and cream cheese
| potatoes (mashed) 300 g |
| wheat flour 240 g |
| cream (10%) 100 ml |
| vegetable oil 75 ml |
| cream cheese 120 g |
| crab sticks 100 g |
| capelin caviar 180 g |
| cucumbers 80 g |
| green onions 10 g |
| black pepper, salt to taste |
Step 1
Combine the potatoes with the flour, cream, salt and a tablespoon of vegetable oil. Knead the dough, divide it into 8 parts, wrap in clingfilm and send it to the freezer for 15 minutes.
Step 2
Dust the table with flour, roll out thin cakes and fry them in vegetable oil.
Step 3
Prepare the topping. Combine the chopped cucumber, green onions and crab sticks. Season with salt, pepper and mix.
Step 4
Fold the lefse pancakes in half, smear with cream cheese, put the topping and caviar on top. Enjoy.
