Mini wheat flour baguettes with oat bran and flaked oats

Ingredients


wheat flour 220 g
oat bran 40 g
oat flakes 2 tbsp.
dried rosemary 1/2 tsp.
compressed yeast 10 g
warm water 50 g
red dry wine 100 g
olive oil 10 g
salt 1 tsp.
egg yolk 1 pc
milk 1 tsp.

Instructions


Step 1

Combine the wine and water, then dilute the yeast in this mixture. Add the bran, salt, olive oil, flour and rosemary. Knead the dough, cover with a towel and leave in a warm place for 1 hour.

Step 2

After this time, knead the dough, divide it in half and shape into mini baguettes.

Step 3

Place them on a parchment-lined baking tray, brush with a mixture of egg yolk and milk and sprinkle with rolled oats. Then cover with a towel and leave for another 1.5 - 2 hours.

Step 4

After this time, make incisions on the baguettes. Spray the oven heated to 270 degrees with water, reduce the temperature to 250 degrees and bake the baguettes for 12-15 minutes. Then let them cool completely.
