A light Moroccan salad with carrots, oranges and pine nuts for those watching their figure.
carrots 200 g |
raisins 60 g |
pine nuts (or walnuts or cashews) 100 g |
oranges 2 pcs |
zira to taste |
mint leaves to taste |
salt to taste |
fresh chili pepper to taste |
DRESSING: |
honey 25 g |
olive oil 25 ml |
lemon juice to taste |
Step 1
Toast the pine nuts in a dry pan until golden, dust them on a paper towel and let them cool.
Step 2
Pour boiling water over the raisins and leave for 30 minutes. Then drain and blot off the moisture with a paper towel.
Step 3
Combine the grated carrots, peeled orange slices, chopped mint leaves and chili pepper, pine nuts, raisins, zira and salt in a bowl.
Step 4
Prepare the dressing. Combine honey, olive oil, lemon juice in a bowl and mix well. Dress the salad and serve.
