A legendary Austrian dessert that will blow any gourmet away - apple strudel.

EXTENSION Dough (1 kg): |
wheat flour 700 g |
vegetable oil 125 ml |
kefir (1%) 125 ml |
cold water 125 ml |
egg 1 pc |
salt 2 g |
Step 1
Combine water, kefir, oil, egg, salt and mix. Then, gradually add sifted flour and knead a homogeneous dough. Wrap it in foil and leave it in a warm place for 1 hour.
Step 2
Prepare the filling. Pour warm water over the raisins and apricots and leave for 20 minutes. Then rinse and dry. Cut apricots into straws, peeled apples into medium cubes and chop nuts. Combine the raisins, apricots, nuts, apples, vanilla sugar, starch, sugar, cinnamon, lemon juice and mix well.
Step 3
Roll out the dough, then stretch it with your hands to a thickness of 2-3 ml. Place the filling on the edge of the dough and roll up into a tight roll, tucking the edges inwards. Place the strudel on a parchment-lined baking tray, brush with oil and bake at 190˚ degrees for 30 minutes. If desired, serve the strudel with whipped cream. Bon appetit!
