This dish is the result of cleaning out my refrigerator. A great way to get rid of stale food and start the new week with something fresh to implement your new ideas.
Pictured is a baked pumpkin with pre-soaked pearl grits, sprouted Chinese beans, shiitake mushrooms, pine nuts, fresh thyme, barberries, leeks and assorted vegetables.
It may sound very complicated, but it's really just a random combination of anything from the fridge. Make your own version with different cereals, vegetables, nuts and herbs and there will be your own unique dish that turns out simple and delicious.

Step 1
Take half a pumpkin and scrape out the core to make a deep plate.
Step 2
Mix all the ingredients and place in the pumpkin dish. Add the liquid to allow the grits to simmer.
Step 3
Bake the foil-covered pumpkin at 170C for 40-50 min.
Step 4
Remove the foil and continue baking at 190C for a further 10 mins.
