Step 1
Melt the chocolate with the butter, coffee and brandy in a water bath, then let the mixture cool.
Step 2
Separate the whites from the yolks. Beat the yolks with 30 grams of sugar, add the flour and mix.
Step 3
Combine the yolk and chocolate mixture, add the cocoa and mix.
Step 4
Whisk the whites with the remaining sugar and mix into the chocolate batter.
Step 5
Grease the molds with butter, sprinkle with flour and fill 2/3 full.
Step 6
Bake the fondues for 10 minutes at 200℃. Serve warm.
