Recipe for poppy seed kulich with candied fruits and lemon zest from Cook'kareku restaurant
| flour 250 g |
| sugar 100 g |
| milk 100 g |
| dry yeast 5 g |
| butter 100 g |
| egg 1 pc |
| yolk 1 pc |
| raisins 25 g |
| candied fruit 150 g |
| vanilla sugar 1 tsp. |
| poppy seeds 1 tbsp. |
| zest of one lemon |
| FOR GLAZURA: |
| egg white 1 pc |
| powdered sugar 150 g |
| lemon juice 1 tsp. |
Step 1
Prepare the opara. Dissolve the yeast in warm milk, add a pinch of sugar and 2 tablespoons of flour. Put it in a warm place for 30 minutes (it is ready when the yeast has risen and fallen off).
Step 2
Mix the flour, egg, egg yolk, remaining sugar, vanilla sugar — mix together, add to the puff pastry and knead the dough. Add the softened margarine and knead the dough until elastic. Then place the dough in a warm place to rise again.
Step 3
Add the raisins, candied fruit, lemon zest and poppy seeds to the risen dough. Knead the dough well.
Step 4
Fill the prepared cake molds with 1/4 full of dough and leave in a warm place.
Step 5
Once the dough has increased in volume to the top of the mold, place the kulich in a preheated oven at 180 degrees Celsius and bake for 40 minutes.
Step 6
When ready, cool and remove from the mold.
Step 7
For the glaze, beat the protein with lemon juice, add powdered sugar in small portions. Spread the glaze over the kulich and decorate with marshmallows and Easter decorations.
