Bulgaria also has its own okroshka, only it is called Tarator and is prepared in its own Bulgarian way: from cucumber, nuts and dill. So feel free to make it and add another recipe to your list of summer cold soups!
cucumbers 3-4 pcs
garlic 1 clove
walnuts a handful
dill
sour cream 150 ml
water
quail eggs (boiled) 2 pcs.
black bread chips
salt
black pepper
Step 1
Grate the cucumbers. Season with salt and leave for 10 minutes.
Step 2
Cut the garlic clove in half, crush with a knife blade and grind in a mortar together with the walnuts.
Step 3
Squeeze the cucumber pulp and transfer to a saucepan. Add the garlic and walnut dressing, sour cream and fill with cold water. Stir thoroughly so that the sour cream is completely dissolved.
Step 4
Add finely chopped dill, pour into plates and season to taste with salt and pepper.
Step 5
Cut the quail egg in half and place on top. Serve with black bread chips.
Step 6
To make these chips, lightly freeze black bread in the freezer and slice into thin slices. Dry in the oven so that the chips curl up a little.
