Salad of wild mushrooms with chickpeas and onion fries
| mixed wild mushrooms 300 g |
| boiled peppers 240 g |
| onions 150 g |
| grated parmesan 60 g |
| butter 45 g |
| vegetable oil 150 ml |
| parsley 20 g |
| green onion 10 g |
| TO TASTE: |
| salt |
| black pepper |
| dried garlic |
| Italian herbs |
| DRESSING: |
| olive oil 50 ml |
| lemon juice 25 ml |
| salt, sugar to taste |
Step 1
Boil cleaned and washed wild mushrooms in salted water for 12-15 minutes.
Step 2
Then fry until browned in butter. Season with salt and spices. Add to the mushrooms, stir and remove from the stove.
Step 3
Cut the onions into ribbed pieces and stir-fry until browned.
Step 4
Mix all the ingredients for the dressing. Chop the herbs.
Step 5
Pour dressing over salad, serve with greens, fries and parmesan. Enjoy!
