Vareniki can be made with a million fillings, but of the savory ones, potatoes and mushrooms is the most balanced in flavor. Not bland due to the mushrooms, and not too salty.

FILLING: |
mushrooms (champignons) 200 g |

Step 1
Dough: beat egg with salt, add vegetable oil and water. Stir and gradually incorporate the flour. Knead the dough, knead it for 10 minutes to make it elastic, cover with foil or a towel and leave at room temperature for 30 minutes.
Step 2
Stuffing: wash and cut mushrooms, you can take mushrooms. Fry them with finely chopped onions until tender. Boil the potatoes and mashed potato them. Mix the mashed potatoes with the mushrooms and onions. Add butter and salt to taste.
Step 3
Make dumplings: cut a piece of dough and roll it out. Cut the dough into circles (using a glass), put the filling in the center of each circle and pinch the edges of the dumpling. Repeat.
Step 4
When all the dumplings are ready, boil them in salted water for 5 minutes.
Step 5
Serve with sour cream and herbs.
