Indian vegetable stew Sabji with paneer

Servings: 2
Cooking time: 40 min

One of India's most popular dishes — a flavorful and vibrant sabji with paneer — for vegetarians

Ingredients

potatoes 200 g
sweet pepper 150 g
carrots 150 g
broccoli florets 150 g
melted butter 120 g
paneer (or Adygea cheese) 150 g
cream (10%) 100 ml
grated ginger root 2 tsp.
fenugreek 1.5 tsp.
ground coriander 1/2 tsp.
zira 1/2 tsp.
turmeric 1/2 tsp.
curry 1/2 tsp.
sugar 10 g
TO TASTE:
water
salt
black pepper
red pepper

Instructions

Step 1

Dice the paneer. Combine all the spices. Heat half of the spices in half the oil, add the cheese and fry it until brown (if you use Adygea cheese, it should be fried in the same way and added to the dish together with the broccoli). Then transfer it to a plate.

Step 2

In a skillet, put the remaining oil and fry the ginger a little. Add the diced potatoes and carrots. Fry for 3 minutes.

Step 3

Then add the broccoli and diced peppers. Stir-fry for another 4 minutes.

Step 4

Add the sugar, salt, cream, cheese, water and remaining spices to the vegetables. Stir and simmer the vegetables for 20-25 minutes. Enjoy!
